  • 2.0 kg (4.4 lbs) pale malt
  • 0.3 kg (0.66 lbs) crystal malt (40L)
  • 0.2 kg (0.44 lbs) wheat malt

  • Neutral ale yeast (Safale US-05 or similar)

The Process (for 10 litres / 2.6 gallons):

  1. Mash-in at 70°C (158°F): Heat 13 litres (3.4 gallons) of water to exactly 70°C. Add crushed grain slowly, stirring to reach a stable mash temperature. Hold at 70°C for 90 minutes. This high temperature is the key—it maximises complex sugars while minimising simple sugars that yeast can ferment to alcohol.
